Daddy got Mama a toy.  It’s a tortilla press.  The proper way to thank one’s husband for a toy is to use it! 🙂  But, oh where to begin?  All Recipes has a well rated flour tortilla recipe here.  The whole point of making our tortillas was to use our own flour.  We use a NutriMill to grind the flour.  It’s been with us for a few years now and still works like it’s new.  Some day I’ll step on my soapbox for you about the evils of pre-ground flour, even wheat.  But not today.  Above you can see the flour and oil, mixed.  I didn’t use hydrogenated oil… Just lard.  No transfats.  I used a ratio of white to wheat at 2:3 as we tweak the recipe.

 Our tortilla dough.   Apparently the resting of the dough is a very important step.  Always read some of the top comments about the recipe before attemtping it!  We reduced the salt to 2.5 teaspoons and used a full cup of lard.  Kneaded it gently until it wasn’t sticky and rolled it into balls slightly larger than a golf ball and flattened a bit into a disc.  Cover and let rest.

They came out beautifully.  I’ve never had tortillas made fresh before.  Who knew they were more than just a “stuffins” holder?  They have flavor and texture!  Wow.  I could get really used to this.  And since I can’t tell they were about 60% whole wheat at ALL, I’ll up the percentage next time.  They are fantastic!
